Watermelon & Haloumi Salad

Serves 4 

  •  200g Haloumi, sliced 
  • 1 lemon (100g) 
  • 500g seedless watermelon, thinly sliced 
  • 1/2 red onion (70g), thinly sliced 

In a non-stick frying pan over a medium heat, place the Haloumi slices. 
Season and drizzle with lemon juice. Cook for 1 – 2 minutes until golden. Flip and drizzle with lemon juice; cook for 1 minute. 
Remove from heat and cool slightly. Arrange on a platter with watermelon and onion slices. 
Sprinkle with a little lemon juice. 
Serve immediately. 
Optional: Sprinkle with fresh mint. 
Vegan: Substitute Haloumi for Vegan Haloumi, though note, it is not as salty so you may need more seasoning.
